Agave Oven

Mezcal made with the Horno agave is traditional in the Mixteca Alta area of the State of Oaxaca. It is an ancestral mezcal (distilled in clay pots) that has generally been made there for several generations and only in this region have we heard that it is known this way, and talking with teacher Eva tells us that there in the community of Teozacoalco they use the agave leaves to cover the goat or goat for barbecue. It is a pre-Hispanic tradition to provide flavor when cooking the animal, it is a "hole" barbecue since the animal is buried wrapped in the leaves of the agave and during the multiple hours of cooking, it receives flavor provided by the leaves, which gives it a very characteristic flavor, so this agave is used for "the oven."
Talking more with the mezcalera teacher, she told us that her father said that before there was no espadín agave in that area and the most common was this agave that is now semi-cultivated or semi-wild and is better known as Arroqueño, belonging to the Americana family. We prefer to continue calling it Horno to preserve the way it is called in its place of production and not promote its name change to align with the most popular names.
